Labor Day Tortellini Kabobs
Ingredients:
- 1 sliced zucchini
- 1 sliced yellow squash
- 6 baby purple potatoes, chopped in quarters
- 2 tbsp olive oil
- ½ tsp salt
- 9 oz tortellini
- Juice pesto
Instructions:
- Preheat the oven to 425° and prepare a baking sheet with parchment paper.
- Combine zucchini, yellow squash, potatoes, olive oil, and salt in a large bowl. Stir until all vegetables are coated with olive oil.
- Bake for 15-20 minutes on baking sheet and set aside to cool.
- Coat prepared tortellini in juice pesto.
- Assemble the kabobs by alternating the vegetables and tortellini.

Ingredients:
- ½ cup packed basil
- ½ cup packed spinach
- ½ cup walnuts
- 1 garlic clove
- ¼ cup olive oil
- ¼ cup Apple & Eve 100% Juice Apple
- ½ tsp salt
Instructions:
- Combine all ingredients in a food processor until well blended. Keep aside for kabobs.
