Place the raw cashews and dates in a small mixing bowl. Cover them with about 1 cup of very hot water and let soak for 5-10 minutes. Drain and place in a food processor.
Add the oats, vanilla extract, salt, and baking soda to the food processor and mix until ingredients begin to cluster together.
Pour the mixture into a small mixing bowl. Add the chocolate chips and stir with a fork.
Scoop the mixture out with a tablespoon and roll between hands until a dough ball forms.
Yields: Serving 8 bites
Healthy cookie dough bites can be eaten whole, crumbled on smoothies, or used to top a yummy yogurt bowl.
