Make and Take Breakfast Burritos
Mornings are a breeze with these pre-prepared, hearty breakfast burritos. Prep, freeze, heat, and eat on the road! We stuff them with healthy things kiddos will actually eat.
Ingredients:
- 1 whole wheat tortilla
- 1oz shredded cheddar cheese
- 1 egg, scrambled
- ¼ cup avocado
- ¼ cup red and green peppers, chopped
- Cilantro to taste
Instructions:
- Preheat oven to 400°F and lightly oil a baking sheet.
- Scramble the eggs to your liking, adding salt & pepper halfway through to season.
- Top with eggs, cheese, peppers, avocado, and optional cilantro. Fold in opposite sides of each tortilla, then roll up, burrito-style. Place, seam-sides down, onto preparing baking sheet and cover with foil.
- Place into oven on prepared sheet and bake until heated through, about 12-15 minutes.
- To freeze, cover each burrito lightly with plastic wrap. Freeze up to one month. To reheat, microwave 4-5 minutes, turning halfway through.
